Ecological Old Cellar

The cellars of Guiliang Liquor Industry Group are all made of stone walls and mud, and the four walls are made of strip shaped Maotai Town gravel rock, red sandstone, and clay. This rock is formed at the bottom of the cellar as red soil. This rock was formed in the Cretaceous period, 70 million years ago. Due to its high mineral iron content and abundant microorganisms, the cellar walls are reddish red in color.

The cellar has a long history of brewing, and the microbial population formed during each fermentation process adheres to the stone wall. After time of sedimentation, a unique microbial ecosystem is formed on the cellar wall.

The cellar bottom of Guiliang Liquor Industry uses the old pit mud, which provides a very suitable environment for the fermentation of brewing microorganisms. The complex material and energy metabolism process of microbial population in the cellar will provide power for the production of Baijiu.
