Qu is the bone of wine, and Guiliang Liquor's sauce wine is made using high-temperature Daqu technology, using wheat to make Qu, usually during the Dragon Boat Festival.
The main reason is the temperature and raw materials. After the Dragon Boat Festival, the temperature increased, meeting the requirements for high-temperature conditions in koji making. At the same time, around the Dragon Boat Festival, the wheat matures to meet the demand for raw materials for koji making. High temperature is beneficial for the growth of microorganisms. When microorganisms mix with koji, they secrete a large amount of enzymes, accelerating the conversion of starch, protein, and other substances into sugar.
The cultivation of high-temperature Daqu focuses on stacking, with fewer flipping times. During the cultivation process, the core temperature can reach up to 65 degrees.
